Recipe: Favorite Potato Soup
We
ALWAYS double this recipe as everyone loves it and it makes great
leftovers for
school and work.
ingredients:
¼
cup butter, melted in the bottom of the pot.
1
large onion chopped
1
cup chopped celery
¼
cup flour—I sometimes use less
3
cups water or milk (
I usually do half
milk and half water)
2
cups cubed potatoes ( I often do a mix of sweet potatoes and regular
potatoes
and I always leave the skin on)
2
cubes of bullion (veg or chicken)
Salt
and pepper to taste
preparation:
Saute’
the onion and celery in the butter until soft.
Sprinkle
the flour on the mix and stir it up into the butter and veg.
Add
the rest of the ingredients and leave on low to cook for about an hour
or until
the potatoes are soft.
extras to add that are really good:
Parmesan
cheese on top
Leftover
chicken or ham
Drained,
thawed frozen spinach
