Recipe:  Macaroni and Cheese


ingredients:

For sauce:
1/4 stick of butter
4 Tablespoons flour
3 and 1/2 cups milk
3 cups grated gouda cheese
3 Tablespoons dry mustard
2 Tablespoons wine
squirt of soy sauce
splash of balsamic vinegar

Pasta:
1 1/2 pounds fresh or dried pasta shells or squigles

At the end:
3 cups grated sharp cheddar cheese
2 cups coarse breadcrumbs
little bits of cold butter

preparation:

Preheat oven to 350 degrees

Boil salted water
Cook pasta until almost done, but a bit too al dente to eat normally
Drain pasta and rinse with cold water

Make Sauce:
melt butter in large sauce pan, then add flour to make a roux
cook for three minutes, whisking occassionally
add milk in a steady stream while whisking
keep heat at medium
gradually add gouda cheese while whisking until sauce is creamy and thick
whisk in all other ingredients
season to taste with salt and black pepper
simmer while stirring, ten minutes

prepare a large baking dish
add cooked pasta
add grated cheddar
stir to mix
pour hot sauce over pasta and cheese and stir to mix
cover with breadcrumbs
dot top of breadcrumbs with butter

Bake for 45 minutes
Let cool for 5 minutes
